But definitely Sunchokes!

Oh, good Gawd, how many sunchokes?  At least a 5 gallon bucket full of sunchokes, is what, and that from just one patch of yard.  There are at least four areas containing sunchokes at this point. I’d planted a few tubers that had gotten a little past edibility a few years ago, dug a few up last year, and now this year…..I was thinking of carving out a clump of now-less-than-ornamental grass, creating a new bulb bed, making space to let the Amelanchier (Serviceberry, Shadblow, etc.) grow out a bit.

Sooooooo many sunchokes.  Plenty to eat and share and delight my Beloved with not-potatoes.
